Chicken Pastilla

Pastilla is an iconic Moroccan dish, combining sweetness and spices in a delicious crispy pastry. In this article, we offer a recipe for chicken pastilla, enhanced with our Secret de Fez marinade.

This unique marinade brings a depth of flavor that will make your dish a real treat for your guests.

Ingredients

  • 500g chicken breast, diced
  • 3 tablespoons of our “Secret de Fez” marinade
  • 2 onions, diced
  • 4 eggs
  • 100 g of toasted almonds
  • 1 pinch of cinnamon
  • 1 teaspoon of caster sugar
  • 1 tablespoon of butter
  • Brick pastry sheets
  • Salt to taste
  • sunflower oil for cooking

Instructions

- Chicken Preparation : In a frying pan, heat a little olive oil over medium heat. Add the diced chicken breast and three tablespoons of our "Secret de Fez" marinade. Brown the chicken until golden brown.
- Adding the Onions : Stir the two diced onions into the pan. Add an additional tablespoon of the "Secret de Fez" marinade to intensify the flavors. Cook until the onions are tender and the mixture has reduced.
- Incorporating the Eggs : Beat the eggs in a bowl and add them to the pan. Stir gently to incorporate them into the chicken and onion mixture. Cook until the eggs are cooked through, then remove from heat.
- Almond Preparation : While the chicken mixture is cooling, toast the almonds in a pan with sunflower oil. Add the almonds to the cold oil and toast them until golden brown. Let them cool slightly, then blend them with a pinch of cinnamon, a teaspoon of caster sugar, and a tablespoon of butter until you get a smooth paste.
- Assembling the Pastillas : Take a sheet of brick pastry and place a spoonful of the chicken mixture in the center. Add a spoonful of the almond paste on top. Fold the sheet of brick pastry to form a triangle or square, making sure to seal the edges well.
- Cooking : Preheat your oven to 180°C (350°F). Arrange the pastillas on a baking sheet lined with parchment paper. Brush them lightly with sunflower oil to achieve a nice golden brown. Bake for 20 to 25 minutes, or until golden and crispy. You can also cook them in an airfryer at 180°C for about 15 minutes for a faster and equally delicious option.
